Ha Saki : ''sharp cutting-edge'', the perfect name for the blades of the
new line of professional knives in Japanese style.
The Hasaki knives blades are manufactured with a special stainless steel Nitro B X50CrMoV15 with nitrogen, that allows to obtain an uniform micro-structure with an excellent resistance to corrosion and a final hardness, after thermic treatments, up to 57-59 HRC.
According to Japanese tradition, the sharpening is made only on one side of the blade.
Thanks to this characteristic the material cut gets in contact with the blade for a very short time and the friction of
the material cut is reduced to the minimum.
This typology of cutting-edge is ideal to make long and progressive cuts, to make thin slices and to cut fish into fillets.
It is usually considered that a blade sharpened on one side only has a better and neat cutting, but requires more skill to be used with respect to a blade sharpened on both edges.
The handle is made in acetalic resin (POM), that makes the knife comfortable and perfectly balanced during cutting.
This Paderno block with nylon threads that perfectly adapt to the Hasaki blades of Sanelli Ambrogio is supplied with the following items :

The block has the shape of a cylinder provided with holes to drain the residual water.
The central body is indipendent to make cleaning easier and can be washed in dish-washer.
