SAN MAI TSUBAME
The Tamahagane SAN MAI Tsubame knives have a 3-layer stainless steel frame.
The intermediate layer is VG 5 which is very hard and acts as a cutting edge.
The two outer layers are made of SUS410 stainless steel. They are softer and more resistant than stains to the cutting edge, and allow it to be protected effectively.
There are several stainless steel VG.
The stainless steel VG 5 has been selected for the SAN MAI Tsubame knives, since it can be hardened with the maximum hardness compared to the other V-G steels, but has a retention of the upper edge.
The angle of sharpening is between 14 and 15 degrees.
The handle is made of fine Micarta which offers an appearance and an impressive feeling very similar to wood while being more durable.
Micarta is a pressed linen material that is infused with resin, creating a comfortable grip with no need for maintenance.
The blade is hammered by hand up to about half.
The whole blade is then sanded.
Hardness of HRC 58/59 blade.
