The convection steam oven combines the efficiency of a convection oven with the capabilities of a steam oven. These modes can be used separately or in combination with each other. These ovens are the way to go when you want to create delicious baked goods, vegetables, flavorful roast meats and perfectly steamed poultry or fish. The steam is generated by spraying water directly onto the heaters. The steam levels in the chamber are controllable and the oven has multiple automated functions to maintain the set levels. Direct water connection required: ¾", max 30 °C, 150-200 kPa (2 bar), only treated and softened water. The body and chamber are made of high quality stainless steel, the chamber is equipped with an exhaust at the bottom. The powerful 6-blade fans have auto-reverse and can rotate at two speeds (1400/2800 rpm), which results in ideal air distribution in the chamber and prevention of internal turbulence. The fan motor has double bearings and 250 W of power. The manual control panel has a thermostat and steam indicator lights and three large knobs to set the time, temperature and amount of steam. The timer can be set to 120 minutes, the temperature up to 260 °C. The door has two layers of glass with space for gravity ventilation, this keeps the outer glass cool to the touch. The outer glass can be removed for easy cleaning. The door seal is mounted in the chamber and removable for easy cleaning and replacement. The chamber is equipped with removable GN tray guides and halogen lighting. Capacity of 12x GN1/1, the guides are positioned 70 mm apart. With 3 reversible fans. Weight: 135 kg.
