The Global Sai range was developed by Komin Yamada who also designed the first Global knife. 3-PLY SPECIAL STAINLESS STEEL The blades are made of special steel with the exceptional hardness of 58-59 Rockwell, with an excellent cutting edge and two layers of stainless steel outside, corrosion resistant.
The blade material consists of a central core of considerable hardness to maintain an extremely hard edge, surrounded by softer and corrosion resistant stainless steel layers. The external edges of the blade are made of the same steel as the handles, making the forge between blade and handle even more resistant. The hammered finish makes the knives extremely elegant and looks incredible, but helps to prevent the cut food from sticking to the blade, making the cut more slippery.
