The result of Pavoni research, Fiberform is a line of molds that combines the flexibility of food-grade silicone with the stability of technical fiber. This synergy guarantees excellent performance at every stage of production, from freezing to cooking. Available in seven iconic shapes inspired by the great classics of modern pastry making, the 600x400 mm professional format is designed to integrate perfectly into the most intense workflows. Fiberform molds ensure precise demoulding without the need for release agents, uniform cooking with optimal browning and impeccable aesthetics, thanks to the definition of details and the perfectly smooth surface. The structure is easy to clean, even in intensive production contexts, and guarantees excellent handling, always maintaining its shape. The material is resistant to a wide temperature range, from -40°C to +250°C, making the molds suitable for both blast chilling and baking. During the cold phase, the combination of silicone and technical fiber allows for controlled conduction of the cold, reducing cooling times and ensuring an intact flan even at low temperatures. In the hot phase, the fiber structure promotes uniform heat transmission, ensuring even cooking and uniform browning, ideal for sweet and savory leavened products. To further enhance the project, an exclusive recipe book by Cédric Grolet, one of the most influential names in contemporary pastry making. His 14 original creations interpret the seven shapes of the line, highlighting the technical characteristics of the molds and offering concrete ideas for daily laboratory work.
