Spatwola is a project by Bologna-based master pastry chef Francesco Elmi and Sanelli Ambrogio.
Francesco Elmi, Master Pastry Chef, member of the Accademia Maestri Pasticcieri Italiani (A.M.P.I.) and of the Ambasciatori Pasticcieri dell'Eccellenza Italiana (A.P.E.I.) is the inspirer of the 'SPATWOLA' two-handled spatula, a synthesis of technique and technology.
This equipment was created to work in standard 40x60 baking tins.
Thanks to its height and length as well as its flexibility, it is perfect for spreading mousses, creams and icings in silicone moulds.
Its shape makes work easier and saves time without sacrificing quality.
