This complete knife block with 6 Global Sai knives will surprise you with its exceptional quality and elegant design. Legendary industrial designer Komin Yamada brings a new era of innovation to the Global line with Sai Series knives: individually hand hammered knives with a unique character. Combining function and design, these distinctive Japanese knives combine an ergonomic handle with a triple-layered steel blade, whose sharp edge is ideal for a wide variety of daily kitchen tasks, including chopping, dicing, cutting and slicing . The knives with three layers of steel, have a core in patented and ultra-hard Cromova 18 Sanso stainless steel alloy and two outer layers of more flexible 18/8 steel for greater strength and resistance to rust. Professional quality blades are ice hardened to increase hardness, resist corrosion and maintain a long lasting sharpness. Each blade is hand hammered to create hollow air pockets which reduce drag, allowing the blade to slide through food without sticking. The 12.5 degree blade edge is hand mirror polished for exceptionally long lasting sharpness. The perfectly balanced handle features an ergonomic thumb rest for smooth, efficient cutting motion and a stable, comfortable grip. The iconic points on the hollow handle of the knife represent seven traditional Japanese virtues of the samurai code of honor.
